Method

  1. Heat the oil; add the tomatoes, salt and red chili powder.
  2. Cook till the tomatoes become softer.
  3. Add the turmeric powder, coriander powder, cumin powder and sugar. Mix up well.
  4. Add the potatoes and eggplant. Coat them well with the masala.
  5. Pour in the water, cover and boil for the potatoes and eggplant for 15-20 minutes on a low flame.
  6. Beautify and serve the Vangi Batata Bhaaji hot.
